Silken tofu is great for making sauces and puddings.





I like to make a simple vegan Alfredo sauce by just sauteeing some onions and garlic in olive oil, and then add 1/4 to 1/2 cup of nutritional yeast to the oil mixture and cook another minute or so, then put in silkien tofu that has been blended with either rice milk or soy milk to a consistency of an Alfredo sauce and pour that in. I like to add basil and thyme (2 teaspoons of each, or up to 1 tablespoon each for more flavor), and if I am wanting something hinting of hotness, then a shake of the red pepper flakes goes in (a better time to put it in may be in the beginning with the onions and garlic to get the spiciness in the oil). Then salt and pepper if you need more taste to the sauce. Then pour over your favorite pasta that you have.


The puddings may not be appropriate for a diet, so I will skip that one.
Heat some oil in a wok, put in chopped garlic , add half a can of tomato puree and 1/3 cup of water and when it starts to simmer, add tofu ( preferably ) cut into cubes.Simmer for another 10 mins and eat with rice or noodles.


Tastes great with chapati or naan ( unleavened bread from India )
Baked tofu is great. You can marinate it in whatever you want,then bake on both sides until corners start browning.I rub a little oil,chili powder,curry,cumin
