Any easy Tofu Recipes?

I have to make a meal for 14 people in 3 hours...

if you don't have the nutritional yeast, leave it out and don't add any extra water. i usually make scrambled tofu with only the garlic and onions because that's usually what i have around. this dish will even make a believer out of tofu haters.Any easy Tofu Recipes?
Tofu %26amp; Cashew Chow Mein





Serves 14 people





Ingredients:


2.1kg precooked thick wheat noodles (typically found in the refrigerated section of the supermarket)


21 tablespoons soy sauce


14 tablespoons oyster sauce


14 teaspoons sesame oil


14 tablespoons water


14 tablespoons canola or peanut oil


1260g firm tofu鈥攃ut into cubes


7 carrots鈥攋ulienned


14 cups small broccoli florets


14 cloves garlic鈥攎inced (crushed)


14 teaspoons finely grated ginger


3陆 cup roasted cashew nuts or flaked almonds





Method:


LOOSEN the precooked noodles by soaking in a bowl of hot water for 2-3 minutes, then drain and set aside. MIX together the soy sauce, oyster sauce, sesame oil and water in a bowl. HEAT a wok or large frying pan over a high heat, add the oil and stir-fry the carrot and broccoli for 2 minutes. ADD the tofu and stir-fry for 4 minutes. ADD the garlic and ginger and stir-fry for a minute. STIR through the noodles then add the sauce mixture and cashews and mix until thoroughly combined and heated through.

Mexican Tofu casserole:





3 pkgs of firm tofu, crumbled


1 onion


1 small can of presliced black olives


1 small can of green chilis


taco seasoning


canned tomato sauce or diced, blended


2-4 cups corn chips


2-3 Tbsp oil


cheese





Saute onion in oil, then add crumbled tofu and sprinkle taco seasoning on. mix in chilis and olives.


In a casserole dish layer 1/3 of tomato sauce, top with 1/3 crumbled corn chips and 1/3 of tofu mixture. Continue layering and then sprinkle cheese on top. Bake at 350 for 45 min.


Serve with brown rice and chili beans


We had it last week when guests came, it was delicious.
Tofu with mushrooms.


Saute mushrooms in a little oil and butter.


Cut block of tofu down the middle, lengthwise .


Cut each section into 1'2'; thick pieces. After the mushrooms are fried some remove from the pan/skillet/grill ( I used to have a big, electric frying pan that was good fit for this). Put tofu slabs into the pan sprinkle on some soy sauce and some curry powder, fry at a bit more than medium head until golden brown on both sides.


Add mushrooms to the tofu and let mingle together.


Each batch can be removed and put into a warm oven as the next batches get done. One block of tofu per 4 people. Perhaps some steamed baby carrots and broccolli flowerettes on the side. Maybe sprinkle with some good romano and parmas (?) cheeses (Good Italian restaurants may just give you a couple small containers of these cheeses. that is where I always found the best and fresh)


cover the tofu if it goes in the oven. Just before serving you might put it under the broiler for a short time with the door ajar. Good luck with whatever you do.
