Grilled Tofu Sandwiches

Yield: 2 servings

2 1-in slabs marinated tofu

4 sl White or whole wheat bread

Mayonnaise

Horseradish to taste

1 lg Tomato, sliced

Salt and pepper

Lettuce

Thinly sliced red onions

Be sure to use the firm, Chinese-style tofu rather than the soft or regular tofu. It tastes best after it has been marinated for several days.

PREPARE A FIRE if you are grilling the tofu, and grill it on both sides, about 6 inches above the coals, until it is well-browned and a little crispy. Otherwise, broil the tofu on both sides. Spread the bread with mayonnaise and horseradish to taste. Slice the tofu in half, crosswise, to make pieces 陆-inch thick, and cut the pieces to fit the bread. Arrange the tomato slices on the tofu, and salt and pepper them; add the onion if you wish. Cover with the lettuce and the top piece of bread.

Noodles and Spinach With Tofu

Ingredients

1 lb whole wheat spaghetti, cooked

1 lb frozen or fresh steamed spinach

1-1 1/2 lb firm tofu, cut into 3/4 inch cubes

2-4 tablespoons sesame oil

2-4 tablespoons soy sauce

2-4 teaspoons minced garlic

2 tablespoons peanut butter

2 tablespoons tahini (ground sesame)

2 teaspoons sesame seeds

Directions

1For the sauce: Pour 1-2 tbs sesame oil in large frying pan/wok over medium heat. Ad 1-2 tbs of soy sauce, 1-2 tsp minced garlic, 1 tbs peanut butter and 1 tbs tahini. Stir until mixed into a thick consistency, about 30 seconds.

2Immediately add tofu and stir to coat. Stir intermittently, allowing tofu to brown before stirring. When tofu is browned remove from pan and set aside, cover to keep warm.

3Repeat sauce process above, being perhaps a bit more liberal with oiI just need some tofu recipes that are inexpensive?
You can make a quick and simple marinate with soy sauce, chili powder (spiciness), sesame oil and even some wasabi powder. Also you could add miso paste and a little peanut butter.

Slice the tofu very thin(can get 15-20 slices from a block) and let tofu sit in marinate for a couple hours. Spread tofu slices on a baking sheet and cover with rest of marinate. Bake 8-10 mins on each side at about 400 degrees.
Something really easy, but very tasty, is to grill or saute the tofu and pour some bottled peanut sauce over it. Let it simmer for a couple of minutes and enjoy!
