Anyone have some simple but yummy tofu recipes?

I'm tired of plain old fried tofu or tofu stir fry! I have firm and soft tofu so recipes for both would be awesome! Thanks!!Anyone have some simple but yummy tofu recipes?
Tofu chocolate custard





Take a block of silken tofu, drain the liquid, add it to the mixer with a 1/2 cup cocoa powder and 1cup rice syrup or honey, to make a custard, then i pour it into a graham cracker crust and top with fresh berries, let chill in fridge for at least 2 hours...

Blueberry tofu pudding or frozen custard





Ingredients (use vegan versions):





2-10 oz pkgs Mori-Nu firm tofu


1/2 cup water


2/3 cup sweetener-maple syrup, brown rice syrup, etc


2 cup frozen blueberries


1 teaspoon blueberry extract


1 teaspoon raspberry extract





Directions:





Combine all ingredients in blender, process until smooth.





I sometimes will keep some of the blueberries whole, and stir them through when I am done blending, but before serving.





You can vary this with just about any fresh or frozen fruit and extracts to match.





This may also be frozen in an ice cream machine for ice cream, or freeze in ice cube trays.





Serves: 4

Pumpkin Pie








INGREDIENTS


1 unbaked 9-inch / 23 cm pastry crust


3/4 lb / 350 g tofu


1 x 16 oz / 450 g can pumpkin


1 1/2 t cinnamon


3/4 t ginger


1/2 t nutmeg


1 t salt


1 t vanilla


1 1/2 t rice syrup


1 1/3 cup sugar


1/3 cup oil





METHOD


Preheat oven to 350F/180C. Blend all the ingredients in a blender until smooth and creamy. Pour this mixture into an unbaked pastry shell. Bake for one hour. Chill in the fridge before serving.





NOTES


I've been making this one for years. Very easy, simple and fools non veggies.


I always like to ask non-veggies if they'd ever tried tofu about halfway through their second helping of this... you should have seen my grandpa's face when I told him he just ate tofu and liked it.

Tofu rice croquettes


Total servings: 8





Ingredients


1 cube vegetable stock


1 tsp curry powder


50 g white rice


2 eggs


750 g tofu


1 onion


1 cup of oil


50 g bread crumbs





Directions


Boil the rice in 2 time its volume water until soft and cool down a bit. In the meantime, chop the onion and bake in 1 Tbs oil until tender. Separate the eggs. Mix the egg yolk with the tofu, cooked rice, onions, vegetable stock and spices.Knead the mixture with your hands and form croquettes. Roll them through the beaten egg white and then through the bread crumbs.Deepfry both sides in hot oil until golden brown.

Tofu Fruit pudding





Ingredients:


1 lb Soft tofu


2 3 cups fresh or frozen


Berries or peaches or....?


1 c Frozen, concentrated apple


Juice, do not dilute





Directions:


put all in a blender or food processor.


Chill and serve


If you use bananas, serve immediately, bananas turn brown quickly

Chocolate Pudding (tofu)





1 10.5 oz. or 12.oz package firm silken tofu


1/2 cup vegan sugar


1/3 cup unsweetened cocoa powder


2 teaspoon vanilla extract





Blend it all together.





This works really well on it's own or between cake layers. I've also done it with banana. Yum.

Tofu chocolate pudding:





Blend 2 (12 oz)packages firm or extra firm tofu in the blender.





Melt 10-12 oz choc. chips. After they have melted, add 3 tablespoons of honey or maple syrup.





Add the chips and honey mixture to the tofu in the blender. Blend until mixed.





It's delicious!

Teff tofu pudding





1 cup cooked and cooled Teff (cooked like cereal omitting raisins)


1 cup tofu


2 to 4 tbsp. maple syrup, honey, or other syrup


1 tsp. vanilla





In a blender combine tofu, sweetener, and vanilla. Blend until smooth and light. Pour cooked Teff and tofu mixture in a bowl. Mix thoroughly, cover, and chill


Variation: Add slices bananas. Serve over Teff-Carob Cookies.

Do a chocolate tofu pie. Take your firm (yes, the firm) tofu and in a blender or food processor whirl it with cocoa, raw sugar or agave nectar, melted Earth Balance margarine or extra virgin coconut oil and a little corn starch, agar or xanthan gum until all the white flecks are gone (don't be surprised that the mix gets warm). Depending on your tofu and other ingredients you choose you may also need to add a touch of warm water to thin. It should be slightly runny so that you can pour/scoop it into a prepared pie shell. Refrigerate for a few hours so that it firms up and top with this topping:





To about a cup of your soft tofu add a good dose of melted coconut oil, a shot of agave nectar, a dash of lemon juice and vanilla (or other extract) and a touch of salt. Blenderize the ingredients until everything is smooth, thick and a little fluffy. Pipe or spread the topping onto the cooled pie.





You now have a tasty chocolate tofu cream pie that even the meatie types will like%26lt;G%26gt;. It's also fun to watch their faces when they learn that a slice of the pie has more protein and healthier fat than the stuff they usually eat!

Herbed and Spiced Tofu





1/4 pound extra firm organic tofu


curry powder, to taste


thyme, marjoram, cumin; to taste freshly cracked black pepper and salt


small amount of olive oil


ground red pepper, to taste


2 cloves fresh minced garlic


1/4 small onion, minced


turmeric, to color


2 to 3 mushrooms, chopped





Crumble tofu and mix with herbs and spices. Add enough to make the tofu yellow and fragrant. Allow to sit for twenty minutes in the fridge. Heat a small pan with the olive oil in it until the oil is warm. Fry mushrooms. Add tofu mixture and a little water, allow water to evaporate and the mixture to intensify in flavor, about 5 to 10 minutes depending on how much water you put in. Remove from heat and serve over whole wheat toast for a breakfast sandwich or in a pita. Serves 1 large or 2 medium.

Vegetable oil, to saute


16 ounces tofu, diced


6 cups diced mixed vegetables (recommended: onion, green bell peppers, zucchini, carrots, and mushrooms)


2 cups salsa


8 corn tortillas


Jack cheese, shredded





In a hot saute pan coated with oil, saute the tofu and vegetables until al dente, about 6 to 8 minutes. Add the salsa and cook the mixture until it is hot. Serve the tofu ranchero over a corn tortilla and top it with shredded cheese.

a piece of soft tofu..chilled in a fridge till cold..


to make sauce : add one soup spoon of oyster sauce ( get from asian food supermarket ';lee kum kee'; brand is not bad) to half a cup of soya sauce. stir well and chill.





to serve just put tofu in a deep dish or bowl and pour sauce over tofu





alternatively you can add sauce to tofu and then chill in fridge,





you can sprinkle some fried shallots over dish to make it more fragrant
Barbecue Tofu Salad


INGREDIENTS:


1 block firm or extra-firm tofu, well pressed


1/2 cup corn


1 green bell pepper, diced


1 red onion, diced


2 tbsp fresh cilantro, chopped


1/2 tsp cumin


1/2 cup mayonnaise or vegan mayonnaise


1/4 cup barbecue sauce


PREPARATION:


Combine the tofu, corn, pepper and mayonnaise in a large bowl.In separate small bowl, whisk together the remaining ingredients. Pour this dressing over the tofu mixture and toss gently to combine. Serve chilled.





Tofu with Steak Sauce and Onions


INGREDIENTS:


1 package firm or extra firm tofu, well pressed


2 tbsp olive oil


1 onion, sliced


2 tbsp balsamic vinegar


1 tbsp steak sauce


1/3 cup water


1 tbsp flour


PREPARATION:


Slice tofu into 5 or 6 strips about 1/2 inch thick.


Sautee onions in olive oil until they turn brown and begin to carmelize, then add tofu and allow to cook until lightly golden brown.


Add balsamic vinegar and steak sauce and stir to combine.


Next add the water and flour and whisk to combine. Allow to cook until the sauce thickens.


Serve over rice if desired.





Tofu and Oat Veggie Burgers


INGREDIENTS:


1 container firm or extra firm tofu, pressed


1/2 cup oats


1 carrot, grated


2 tbsp instant potato flakes


1 tsp soy sauce


1 tsp garlic powder


1 tsp onion powder


salt and pepper to taste


oil for frying


PREPARATION:


Mash together all ingredients until well combined. Form into patties. Fry in oil on both sides until lightly browned.





Vegetarian Crock Pot Barbecue Tofu


Serve over lettuce, or on toasted French bread.


INGREDIENTS:


2 containers firm or extra firm tofu, pressed


1 1/2 cups ketchup


3 tbsp brown sugar


2 tbsp soy sauce


1 tbsp apple cider vinegar


1 tbsp red pepper flakes


1/2 tsp garlic powder


salt and pepper to taste


PREPARATION:


Combine all ingredients in a crock pot. Cover and cook on low for 5-6 hours.
