What are some of your favorite vegetarian recipes that do not contain tofu?

Homemade black bean and brown rice burger.





Cook a cup of brown rice, you only need 1 cup cooked, but it makes more, but since it takes so long to cook, save it and have it w. some veggies another day.





Take a 15.5 oz can of black beans and drain and rinse them.


Them mash them with a fork in a medium bowl.





Stir in 1 lightly beaten egg (i only use the egg whites personally) and the rice (one cup cooked)





Add about 2-3 tbsp of your favorite salsa and mix together well.





Pour about 2 tbsp of olive oil in a skillet and preheat on med. heat.





Drop about 1/2 cupfuls of mixture onto skillet usually makes 4-5 and cook for about 5-6 minutes on each side, be careful they're not very sturdy.





I like to add some pepper jack cheese on top and let it melt. And then add some taco sauce. VERY TASTY, AND HEALTHY

My all time favorite is lentil soup, in any form, with any added ingredients (except tofu, I guess.) It's easy to make with whatever veggies you have laying around, and it's always healthy and filling. I usually just mix lentils, onions, garlic, canned tomatoes, and whatever vegetables I happen to have, plus enough water to cook it in. Simple, cheap, and delicious.What are some of your favorite vegetarian recipes that do not contain tofu?
Portobello Mushroom Burgers





INGREDIENTS


4 portobello mushroom caps


1/4 cup balsamic vinegar


2 tablespoons olive oil


1 teaspoon dried basil


1 teaspoon dried oregano


1 tablespoon minced garlic


salt and pepper to taste


4 (1 ounce) slices provolone cheese








DIRECTIONS


Place the mushroom caps, smooth side up, in a shallow dish. In a small bowl, whisk together vinegar, oil, basil, oregano, garlic, salt, and pepper. Pour over the mushrooms. Let stand at room temperature for 15 minutes or so, turning twice.


Preheat grill for medium-high heat.


Brush grate with oil. Place mushrooms on the grill, reserving marinade for basting. Grill for 5 to 8 minutes on each side, or until tender. Brush with marinade frequently. Top with cheese during the last 2 minutes of grilling.
I have a really lovely tempeh recipe where I cut up 8 oz of tempeh into four pieces, marinate in a mixture of 1/2 cup of soy sauce and 1/4 balsamic vinegar for an hour or so. Then I mix 1/4 cup pomegranate molasses and 1/2 cup soy sauce and heat it in a tiny saucepan until it thickens. I grill the tempeh, drizzling with the pomegranate sauce.

I invented a millet pilaf I call Delightful Millet:





陆 C pine nuts


1 tbsp olive oil


1/4 C dried cherries


1/4 C dried apricots, chopped


1 C millet


2 C water


陆 tbsp coriander


1 tbsp nutritional yeast





Heat oil in sauce pan and add pine nuts. Lightly toast until pine nuts change color. Add millet and cook for 30 to 45 seconds more. Add fruit, water, and seasonings and bring to a boil. Lower heat to simmer and cook for 15 minutes or until water is evaporated. Serve.





If you use a little more water, the millet will be fluffier.
My mom makes a great dish with Seitan and Mashed Potatoes; and its really easy!


Just cut the seitan into bite-size chunks, and set them aside. Then slice a small yellow onion into thin strips, and begin to saut茅 it in some butter or margarine. Once the onions are translucent add about 1/2 vegetable stock and 4-5 tablespoons of soy sauce. These amounts can be changed based on your preference. Add the seitan and cook until the whole dish is hot.


Serve the Seitan and onions over homemade mashed potatoes. YUM!
Well i think tofu is excellent!!! But soy burgers are great and the boca and morning star brands make all kinds of soy burgers, sausages and individual lasagnas and chilis which are all great!!! They even make soy chicken nuggets. I also eat alot of pastas and mostly fruits and veggies. I also eat alot of cheezits for snack!! lol : )
Do you have something against tofu?





Bell Pepper Soup is delicious and tofu free though XD





* 录 c olive oil


* 1 small onion, chopped


* 4 large bell peppers (any color*), seeded and diced


* 1 medium potato


* 陆-1 t salt


* 1 t red pepper flakes


* 1陆-2 c vegetable stock





And add some scallions and chives... or if you're not a vegan I guess you can add sour cream...
BULGAR BURGAR


1 CUP OF BULGAR WHEAT


4 CUPS WATER


1 TSP SALT


1/2 CUP OF CASHEWS


PUREE THE WATER SALT AND CASHEW OR PECAN PEACES OR MEAL UNTIL SMOOTH LIKE A MILK POUR INTO A POT WITH BULGAR AND BRING TO A BOIL AND BOIL FOR 15 - 20 MINUTES STIR SO IT DOES NOT STICK.


THEN POUR OUT ON A COOKIE SHEET AND BAKE 200 DEGREES FOR 2 HOURS STIR ABOUT EVERY 15 MINUTES. THEN COOL AND USE 1 CUP AND WITH 4 CUPS OF HOT TOMATO SAUCE AND MAKE HOT SLOPPY JOES ON BREAD. THIS IS A COMPLETE PROTIEN NUTS AND GRAINS MIXED ANYWAY YOU FIX THEM IS A COMPLETE PROTIEN.
