Tofu recipes?

My fiance loves tofu (I think its okay too) but I don't have any recipes for it and would love to use it as its so good for you.





Any ideas or links would be great.

18 ounces tofu, well chilled


3 tablespoons honey


1/4 teaspoon vanilla extract


1/8 teaspoon salt


Method


Combine 12 ounces tofu, honey, vanilla, and salt in a blender and puree for about 1 minute.


Transfer to a covered container and place in the freezer overnight.


Puree remaining 6 ounces tofu in the blender until smooth.


Cut the frozen tofu into small chunks.


While pureeing at high speed, add a few chunks at a time to the tofu in the blender until all has been added and the mixture is smooth and thick.


Serve immediately.


Variations:





For variety, add toward the end of pureeing 1 egg yolk, 2 to 4 tablespoons each chopped almonds or shredded coconut, and your choice of fresh or frozen fruits.


Serve topped with chopped nutmeats.


Or add 1 teaspoon powdered green tea (matcha) and 1 additional tablespoon honey; omit vanilla.
Look on epicurious.com for their Hot and Sour Soup. It's excellent! It calls for chicken broth, but I gave this to a vegetarian friend of mine and she subbed veggie broth and she and her husband absolutely love it.
I love Fegg (Fake Egg) Salad!!








Take a pound of Fu (tofu). Put it in a strainer and let the liquid drain out of it. I sometimes leave it go for half an hour.





Heat a teaspoon or two of olive oil on a very low temp in a skillet that will hold all the fu. Put about 2 teaspoons of Turmeric (a spice used traditionally in Indian foods - turns everything yellow) in the oil and cook the turmeric just a bit. A minute or two. Then add your fu. The fu will begin to turn yellow from the turmeric. If you don't cook the turmeric first it has a much stronger flavor. Once the fu is warm add two tablespoons Nutritional Yeast. Gives it the added Mmph of the ';egg yolk';


It's a source of nutrients for vegetarians and vegans. Mix that in well.





Then put it in a bowl or Tupperware. Depends on if you're going to eat it all right away or store it.





Let it cool. Then add Vegenaise and what ever else you like in your standard egg salad. I like capers.
