Tofu Salad





1 (14-16 oz) firm tofu, drained


3 tablespoons soy sauce


1 tablespoon mirin (rice wine)


2 teaspoons sesame oil (or to taste)


1 tablespoon rice vinegar (or white wine vinegar)


2 tablespoons olive oil


1 teaspoon minced garlic (from jar)


1 teaspoon minced ginger (from jar)


1 large tomato (chopped)


green onion to taste





1. Stir together the olive oil, garlic and ginger and set aside for


flavors to blend (I used a shot glass).


2. Drain Tofu. In a colander in your sink, place tofu on a small


plate. Place another plate atop the tofu and weigh down with a


heavy object to drain for one hour. (if you are not allowing the


liquid to drain into the sink, pour out the liquid every 15-20


minutes.)


3. Whisk together the soy sauce, mirin, sesame oil and vinegar in a small bowl, Whisk in olive oil, garlic and ginger. Place in refer-


ator while tofu drains.


4. Cut tofu into bite size pieces and mix with tomato and green


onion(to taste). Pour in the dressing and gently toss.





This is a very light refreshing salad and is very versatile. Other additions would be sliced red onion, cilantro, or parsley. You could also garnish with lime wedges, sesame seeds, etc. Use your imagination! The secret is to use firm tofu and drain as noted.

I would do something asian with it. This recipe's just coming from my head and experience...


Ingredients:


-Package of tofu, any softness or firmness is fine, but I prefer soft, has more of a delicate flavor


-Bean sprouts, hand full would be fine


-white button mushrooms~~i would say again, handful unless cooking for more then one person


-1 diced scallion


-Soy sauce


-(optional) oyster sauce


-corn starch, water, mix around, to form reux


-1/2 cup or more of H20


-rice, again optional





Prep:


Dice up the shrooms, scallions


Slice the from the package into squares





-In a heated pan/wok, add oil


-when the oil's heated through add the bean sprouts and stir fry it for about 1 min


- Add the sliced shrooms, stir fry those until softened


-Add the soy sauce and mix


-Dump in the tofu and mix it that much as it tends to break up, -Add the about tablespoon of oyster sauce on top of the tofu -Add the water around the tofu until half way or so covering the shrooms and cover the pan for about 5 min


-After that mix all the ingredients carefully, add the reux (corn starch and water) stir around until desire thickness of sauce -Add the scallions and serve onto the rice
Mama Mia Vegetable Pie





1tsp olive oil


1 med green pepper, chopped


1 small onion, chopped


12oz can tomato sauce


6oz firm tofu, drained well and crumbled


2c cooked spagetti


3/4 c mozzerella cheese, shredded





Saute pepper and onion until tender.


Stir in tomatoe sauce and tofu


Bring to a boil; reduce heat and simmer 10min uncovered.


Grease 9';pie plate


Arrange spagetti in bottom and up sides.


Pour tofu mixture over spagetti.


Sprinkle with cheese.





Bake @ 375 degrees 20 minutes


Let stand 5 min. before slicing,
